The Best Jacket Potato

It takes a lot for us to call any recipe ‘the best’, but we’ve worked our way through all of the techniques to find the perfect jacket potato. This recipe will give you a crisp skin with a deliciously fluffy centre that gets even better with a squeeze of Primula cheese. Here’s how to make the best jacket potato, ever!

  • 4 floury potatoes (Maris Piper or King Edward)
  • Olive oil
  • Flaked sea salt
  • Filling of choice
  • 150g tube of Primula Cheese

  • Squeeze all the water out of your grated pumpkin and sweet potato using an old tea towel. Add the eggs, parsley, and season to taste. Then mix well.
  • Heat a frying pan over medium-high heat and add your olive oil. Spoon a heaped tablespoon of the rosti mixture into the pan and cook for 2 minutes, until golden brown, then turn over and repeat. Be gentle when turning them over. Repeat until all your mixture is gone.
  • Remove from the pan and place on a paper towel to remove any excess oil.
  • To serve, plate a couple of your rosti and top with a squeeze of Primula Cheese ‘n’ Chives. Garnish with spring onion and lime wedges. Then serve and enjoy!
