Fully Loaded Queso with Chorizo

This Mexican-inspired take on the classic queso is unbelievably delicious. It's loaded with chorizo, red onion, cherry tomatoes, coriander and Primula Cheese 'n' Jalapeño to create a speedy cheesy dip with a kick! While this dish is perfect with tortilla chips, it can also be used as a topper for burgers and hotdogs straight off the BBQ to really squeeze the most out of summer!

  • 100g soft cooking chorizo
  • 1/2 red onion
  • 5-6 cherry tomatoes
  • Small bunch fresh coriander, stalks chopped separately
  • 1 tsp cornflour
  • 150 ml milk
  • 75g Primula Cheese 'n' Jalapeño
  • Juice from 1/2 lime

  • Pre-heat oven to 190°C/Gas Mark 5. Then place the chorizo in to cook through for 15 mins. It's a good idea to do this in a dish lined with a little tin foil to capture some of the oils. Once cooked, remove from the oven and chop into small pieces.
  • Chop the red onion and tomato into small pieces and place into a saucepan along with a little of the chorizo oil captured from cooking. Use medium heat to soften (1-
    2mins) and then add the chopped chorizo pieces, coriander stalks and cornflour. Mix to coat everything as you cook out the cornflour for another minute.
  • Pour in the milk and squeeze in Primula Cheese 'n' Jalapeño. Continue stirring until fully combined then add the lime juice. Turn off the heat after another 2-3mins. The
    sauce will thicken a little during cooking and more once it's cooled to room temperature.
  • Place into a bowl and top with a generous sprinkling of chorizo, red onion and tomato along with the coriander leaves and a drizzle of any reserved chorizo oils. If you like it hot add some jalapeño to the top too.
  • Serve with tortilla chips, spread into hotdog buns or spoon on top of burgers – the only limit for its uses is your imagination!
