Cheesy Buffalo Cauliflower Bites

Sweet, spicy and deliciously cheesy! These buffalo cauliflower bites are all kinds of fun! Squeeze the most out of summer with this American-inspired vegetarian dish. Primula Original Cheese brings a delicious twist to the sauce that balances the flavours whilst the sweet and spicy glaze adds a warming finish!

  • For the cheesy buffalo sauce:
  • 1 large cauliflower, broken into florets
  • 75g Primula Original Cheese
  • 1/2 tsp garlic powder
  • 1 tsp black pepper
  • 1 tsp sea salt
  • 1 tsp paprika
  • 1 tbsp olive oil
  • 3-5 tbsp boiling water
  • For the sweet and spicy glaze:
  • Juice from 1/2 lemon
  • 2 tbsp maple syrup
  • 1-3tsp hot sauce of choice
    • To serve:
    • Juice and zest from 1/2 lemon
    • 1/2 tsp garlic powder
    • 3 tbsp mayonnaise
    • A few fresh coriander leaves

  • Pre-heat oven to 200ºC/Gas Mark 6 and line a baking tray with parchment paper.
  • Mix all sauce ingredients together in a large bowl to create a smooth consistency and tip in the cauliflower florets. Toss together well to fully coat.
  • Tip the florets onto the baking tray and roast in the oven for 40mins, turning the cauliflower pieces over about halfway through cooking.
  • After 40mins, combine the glaze ingredients and then pour it all over the cauliflower pieces. Either return to the oven for 10mins or finish on the BBQ for a couple minutes on each side.
  • To serve, mix to gather the mayonnaise, garlic powder and lemon juice to create an aioli style dipping sauce. Serve along with the cauliflower florets and a sprinkle of fresh coriander
