Cheese & Chive Potato Salad

Potato salad is a summer favourite and easy to rustle up in bulk, making it an ideal dish for BBQ’s!

  • 150g Primula Cheese with Chives
  • 500g new potatoes, halved
  • ½ lemon, juice only
  • 1 handful parsley, chopped
  • 1 tbsp capers, chopped
  • ¼ red onion, thinly sliced
How you do it
How you do it
  • Place the new potatoes in a pan of lightly salted boiling water. Cover and simmer for 15 minutes or until tender.
  • Drain and set aside to cool.
  • In a large bowl mix the Primula Cheese, black pepper, lemon juice, parsley and capers.
  • Add a generous seasoning of black pepper, and sea salt, to taste.
  • Add the potatoes to the bowl and stir until evenly coated with the mixture.
  • Garnish with red onion and serve.
