BBQ Pulled Chicken Stuffed Sweet Potato

  • 100g Primula Cheese ‘n’ Ham
  • 5 sweet potatoes
  • Vegetable oil
  • 3 chicken breasts
  • 100g kale
  • 1 red pepper, diced
  • 450g BBQ sauce
How you do it
How you do it
  • Preheat oven to 220 ° C.
  • Pierce holes in the sweet potatoes with a fork and microwave for 15 minutes until potato is soft.
  • Place in the oven and bake for 45 minutes.
  • Warm oil over medium heat in a large frying pan, cook chicken breasts until chicken is cooked all the way through and set aside.
  • Remove sweet potatoes from the oven.
  • Preheat grill to high.
  • Using two forks, shred the cooked chicken and return to the pan. Add kale, pepper and BBQ sauce and mix to coat evenly.
  • Cut each sweet potato down the middle and fill with shredded chicken.
  • Top with Primula Cheese ‘n’ Ham, and grill for 2-3 minutes.
  • Serve hot.
