Primula Rarebit

Ingredients

  • 150g tube Primula Cheese with Chives
  • 3 tbsp Milk
  • 1 tsp English Mustard
  • 2 tsp Worcestershire Sauce
  • 2 tbsp Brown Ale (optional)
  • 1 Egg Yolk
  • 4 slices of toast

Method

  1. Heat one tube of Primula and the milk in a pan until smooth and creamy.
  2. In a separate saucepan reduce the ale, Worcestershire sauce and mustard (if ale is not being used, no need to reduce). When thick, add this mixture to the cheese sauce.
  3. Season well with salt and pepper and beat in the egg yolk. Return to a gentle heat and stir until the mixture has thickened.
  4. Grill one side of the bread and when golden turn over and spoon the cheese mixture over the toast. Grill until bubbling.
  5. Serve with extra Worcestershire sauce.
