Primula Rarebit

Ingredients
- 150g tube Primula Cheese with Chives
- 3 tbsp Milk
- 1 tsp English Mustard
- 2 tsp Worcestershire Sauce
- 2 tbsp Brown Ale (optional)
- 1 Egg Yolk
- 4 slices of toast
Method
- Heat one tube of Primula and the milk in a pan until smooth and creamy.
- In a separate saucepan reduce the ale, Worcestershire sauce and mustard (if ale is not being used, no need to reduce). When thick, add this mixture to the cheese sauce.
- Season well with salt and pepper and beat in the egg yolk. Return to a gentle heat and stir until the mixture has thickened.
- Grill one side of the bread and when golden turn over and spoon the cheese mixture over the toast. Grill until bubbling.
- Serve with extra Worcestershire sauce.
