Cheesy Sweet Potato and Carrot Mash

Ingredients

  • 1kg Sweet Potatoes
  • 1 kg Carrots
  • 2 tbsp Olive Oil
  • 3 tbsp Milk
  • 150g Primula Cheese
  • Salt and Pepper

Method

  1. Peel and cut the sweet potato and carrots into cubes. Boil in a pan of boiling water until soft and tender.
  2. Drain well and mash with the olive oil and the milk.
  3. Add the Primula cheese and mix well.
  4. Season to taste and serve immediately.
