Cheesy Sweet Potato and Carrot Mash

Ingredients
- 1kg Sweet Potatoes
- 1 kg Carrots
- 2 tbsp Olive Oil
- 3 tbsp Milk
- 150g Primula Cheese
- Salt and Pepper
Method
- Peel and cut the sweet potato and carrots into cubes. Boil in a pan of boiling water until soft and tender.
- Drain well and mash with the olive oil and the milk.
- Add the Primula cheese and mix well.
- Season to taste and serve immediately.
