Primula Cauliflower Cheese Soup

Serves 4

Ingredients

  • 1 large cauliflower
  • 1 medium onion
  • 1 clove of garlic - crushed
  • 25g/1oz butter
  • 1 tube of Primula Plain Cheese
  • 2 vegetable stock cubes
  • 1 ½ pints/30floz/900ml boiling water
  • Croutons or a large crusty French stick

Method

  1. Place the butter in a large saucepan and melt over a low heat.
  2. Finely chop the onion then add it to the pan & gently cook without colouring it until it is soft and slightly translucent.

Meanwhile

  1. Put the vegetable stock cubes into a jug and dissolve with the boiling water.
  2. Chop the cauliflower into small pieces (leaves can be left on if desired) & add this to the pan along with the crushed garlic.
  3. Bring to the boil then simmer gently for 30 minutes.
  4. Take the saucepan off the heat & transfer the vegetables and stock into a liquidizer.
  5. Squeeze in a tube of Primula Original Cheese then liquidize till smooth.
  6. Serve straight away with croutons or crusty bread.
