Primula Cauliflower Cheese Soup
Serves 4

Ingredients
- 1 large cauliflower
- 1 medium onion
- 1 clove of garlic - crushed
- 25g/1oz butter
- 1 tube of Primula Plain Cheese
- 2 vegetable stock cubes
- 1 ½ pints/30floz/900ml boiling water
- Croutons or a large crusty French stick
Method
- Place the butter in a large saucepan and melt over a low heat.
- Finely chop the onion then add it to the pan & gently cook without colouring it until it is soft and slightly translucent.
Meanwhile
- Put the vegetable stock cubes into a jug and dissolve with the boiling water.
- Chop the cauliflower into small pieces (leaves can be left on if desired) & add this to the pan along with the crushed garlic.
- Bring to the boil then simmer gently for 30 minutes.
- Take the saucepan off the heat & transfer the vegetables and stock into a liquidizer.
- Squeeze in a tube of Primula Original Cheese then liquidize till smooth.
- Serve straight away with croutons or crusty bread.
