Mini Jackets

Makes 12 mini jackets
Ingredients
- 12 small potatoes (Satsuma-sized)
- 1 x 150g tube of
with Chives
- 1 pack of fresh chives to decorate
Method
- Pre-heat the oven to 200°C/400°F/Gas mark 6
- Wash the potatoes thoroughly then pierce each one several times with a fork before arranging on a baking tray
- Bake at 200°C/400°F/Gas mark 6 for 25-30 minutes or until soft inside
- Allow the potatoes to cool for 5-10 minutes
- Roughly chop a small handful of chives & put aside
- With a sharp knife carefully slice off the top of each potato retaining the lid
- Scoop out the insides of each potato into a bowl
- Mash together with half a tube of
with chive
- Spoon or pipe back into the potato skins
- Swirl a portion of cheese on the top of each potato
- Sprinkle a pinch of chopped chives over the top
- Partially replace the lid so the contents can be seen
- Place on a serving dish
