Mini Jackets

Makes 12 mini jackets

Ingredients

  • 12 small potatoes (Satsuma-sized)
  • 1 x 150g tube of Primula with Chives
  • 1 pack of fresh chives to decorate

Method

  1. Pre-heat the oven to 200°C/400°F/Gas mark 6
  2. Wash the potatoes thoroughly then pierce each one several times with a fork before arranging on a baking tray
  3. Bake at 200°C/400°F/Gas mark 6 for 25-30 minutes or until soft inside
  4. Allow the potatoes to cool for 5-10 minutes
  5. Roughly chop a small handful of chives & put aside
  6. With a sharp knife carefully slice off the top of each potato retaining the lid
  7. Scoop out the insides of each potato into a bowl
  8. Mash together with half a tube of Primula with chive
  9. Spoon or pipe back into the potato skins
  10. Swirl a portion of cheese on the top of each potato
  11. Sprinkle a pinch of chopped chives over the top
  12. Partially replace the lid so the contents can be seen
  13. Place on a serving dish
